It's Lime Time!!!

Good Morning!  I had trouble getting on this the past few days to post, sorry for the delay, but here we are. I want to share with you one of my favorite fruits that exists.........the LIME!  My friend Joelle will tell you I carry them in my purse (only sometimes!).

Nutrition facts for one medium lime (lately I can only find small limes, so take that into consideration):
Calories  20, Total Fat  0,  Cholesterol  0, Sodium 5mg, carbs  7g, Dietary Fiber 2g, Sugars 0.

They are loaded with Vitamin C and they are delicious.

Ways I use my little green friends (the lime):

*Squeeze over your salad with a little olive oil (what a delicious way to cut the fat!)
*put on your mango or papaya
*slice 1/2 and avocado and 1 large tomato, squeeze a little lime juice...delicious! (add shaved red onion, too!)
*Squeeze over sliced onions to reduce the "sting"
*Squeeze over your fish after you grill it...I use it on salmon and tilapia specifically.
*Squeeze it on your meats as a marinade, with a little salt and pepper
*Use in place of lemon in your ceviche salads

Try lime on anything you might put salad dressing on, you will taste the difference!  Creamy salad dressings hide the flavor of your veggies, the little green friend (the lime) will enhance the flavor of anything you put it on.

A tossed salad I always make, this is full of flavor:
*Chopped romaine lettuce
*Sliced avocado
*Sliced tomato
*Shaved red onion
*squeeze the juice of 2 to 3 limes over the salad
*about 2 Tbsp. olive oil
*salt and pepper
*sometimes I add very thinly sliced cucumber to this salad
Toss together and enjoy
